Home-style Okroshka with Sausage

In summer, when it’s hot, you don’t want to eat heavy food at all. And here such a dish as cold okroshka on bread kvass comes to the rescue.

Ingredients

  • Okroshechny kvass – 1.5 liters
  • Boiled potatoes – 6-7 pcs.
  • Egg – 3 pcs.
  • Boiled sausage (doctor’s, milk, etc.) or ham – 450 g
  • Radish – 200 g (10-15 pcs.)
  • Fresh cucumber – 300 g (1-2 pcs.)
  • Sour cream – to taste
  • Horseradish table (optional)
  • Green onion
  • Dill
  • Salt to taste

Directions

  1. Cut the boiled potatoes into small cubes.
  2. Cut a fresh cucumber into small cubes.
  3. Cut the boiled sausage into cubes.
  4. Cut the egg into cubes.
  5. Cut the radish into small cubes.
  6. Finely chop fresh dill and green onions. To improve the taste of the dish, chopped greens need to be grated until juice appears.
  7. Stir the chopped food in a common bowl and season with salt. Then put the salad mass on a portioned plate, add 0.5 teaspoons of grated horseradish, 1 tablespoon of sour cream if desired. Pour the desired amount of kvass. For taste, you can add some table mustard to okroshka. Mix everything well.
  8. Sprinkle okroshka on top with fresh herbs. Serve okroshka on cold kvass.
