Homemade Bread with Sour Milk

Delicate and delicious homemade bread made from yeast dough in sour milk, which is very easy to make. From such dough, you can bake not only bread but also all kinds of buns and pies with or without filling.

Ingredients

  • Sour milk – 250 g
  • Butter – 50-75 g
  • Eggs – 2 pcs.
  • Water – 20 g
  • Dry yeast – 11 g of fresh yeast – 50 g
  • Flour – 500 g
  • Sugar – 50 g
  • Salt

Directions

  1. Pour yeast and sugar into the water. We mix. Add 2-4 tablespoons of flour and mix.
  2. Cover with a towel and wait 10-15 minutes for the yeast to react. To make sure that the yeast is activated, run with a spoon – there should be a lot of air bubbles inside.
  3. We send sour milk there and mix. Pour in the heated butter, but not hot. Drive-in an egg or 2 yolks. Stir and salt.
  4. Roughly divide the flour into 2 parts and first add half. We mix. Add the remaining flour and knead the dough.
  5. We spread the dough on a surface oiled with vegetable oil and begin to knead with oiled hands. If you leave the dough alone and it starts to creep, does not hold its shape, adds another 50-100 g of flour.
  6. Prepare a bowl or multicooker for proving the dough, sprinkle the bottom with flour. I sent the dough to the multicooker, turning on the “Multicooker” mode for 30 minutes and setting the temperature to 35 degrees. But you can leave the dough for 1 hour at room temperature, cover it with a towel.
  7. The dough came up. We knead and form a bun out of dough. Put on a baking sheet lined with parchment paper. Cover with a towel and leave for 15-20 minutes.
  8. We send it to a preheated oven and bake bread in sour milk for 30-40 minutes (temperature – 160 degrees). 10 minutes before cooking, grease the bread with a beaten egg.
  9. Ruddy and fragrant homemade bread in sour milk are ready. We leave it for a few hours. When the bread has cooled, we cut it.
