  • Chicken thigh – 600 g
  • Pork neck – 150 g
  • Onions – 70 g
  • Hard cheese – 55 g
  • Garlic – 0.5 clove
  • Soy sauce (optional) – 25 g
  • Gelatin – 5 g
  • Salt to taste
  • Spices to taste

Homemade Chicken Sausage with Pork and Cheese Instructions

  1. Gather and prepare equipment: cling film, blender or meat grinder, baking sheet, and oven.
  2. In a food processor or blender, combine onion (70 g) cut into large cubes, chicken thighs (600 g) cut into 4 pieces, half a clove of garlic, optional soy sauce (25 g), salt to taste, and spices to taste.
  3. Blend until smooth (or use a meat grinder if you don't have a blender).
  4. Dice pork neck (150 g) into small cubes and hard cheese (55 g) into similarly sized cubes.
  5. In a large bowl, combine the blended chicken mixture with the pork and cheese cubes. Add gelatin (5 g) and stir thoroughly until evenly distributed.
  6. Spread cling film on a work surface and distribute the sausage mixture in a long, even log shape on the film.
  7. Wrap tightly in cling film, twisting and tying the edges to seal.
  8. Preheat oven to 210 °C (410 °F).
  9. Place the wrapped sausage on a baking sheet and pour in enough water to cover it completely, creating a water bath.
  10. Cover with another baking sheet on top and bake for 45 minutes until the internal temperature reaches 74 °C (165 °F).
  11. Remove from oven and allow to cool to room temperature.
  12. Transfer to refrigerator and chill for 1.5 hours.
  13. Unwrap, slice, and serve.
