  • 250 g semolina (durum wheat semolina)
  • 1 tablespoon olive oil
  • 400 g ham, cooked
  • 300 g mozzarella
  • 200 g parmesan cheese
  • 500 ml cream

Instructions

  1. In a bowl, knead the durum wheat semolina with the oil and lukewarm water to form a firm dough. Only add the water in small portions so that the whole thing does not become too runny. Let the dough rest for 30 minutes in a damp towel or cling film.
  2. Then knead again. Meanwhile, prepare a 4-6 cm high lasagne pan / baking pan.
  3. Cut the mozzarella into thin slices, grate the parmesan, open the bottle of red wine. Use the pasta machine or rolling pin to roll part of the dough into a thin sheet of dough (approx. 10cmx30cm). Cover the pastry with a slice of ham and mozzarella, then sprinkle with parmesan. Roll the whole thing up into a roll. Then cut this roll into 3 equal pieces and place upright in the form. Take a sip of red wine, then repeat until the mold is full.
  4. Pour the cream into the mold 45 minutes before eating. (the specialist realizes: you can prepare it well for lunch). Then in the oven at 180 degrees for 40 minutes.As a variation, you can also put a piece of Gorgonzola in the rolls.
  5. A strong Chianti goes well with it.
