This chocolate cake is slightly different from the classic Prague cake, but it is also made from chocolate cakes, chocolate cream with condensed milk, and covered with chocolate icing. Home-made cakes for Prague cake are baked from dough with condensed milk and sour cream. The cake turns out to be very tasty and tender.
Ingredients
For cakes:
Condensed milk – 150 g
Sour cream 25% – 250 g (1 glass)
Eggs – 2 pcs.
Sugar – 180 g (1 glass)
Cocoa – 1 tbsp
Flour – 240 g (1.5 cups)
Soda – 1 teaspoon.
For the cream:
Butter (softened) – 300 g
Condensed milk – 150 g
Cocoa – 1 tablespoon.
For glaze:
Chocolate 70% – 150 g
Cream 33% – 150 g
Butter – 20 g
Directions
Beat eggs with sugar until lightweight.
Add condensed milk, sour cream, stir.
Sift flour, soda, cocoa into the resulting mass. Stir with a spatula, then beat the dough with a mixer at low speed until smooth.
Cover the bottom of the mold with parchment (mold dia 24 cm).
Divide the dough into 3 parts and bake three equal cakes. Bake the chocolate cake layers in a preheated oven at 190 degrees for 10-12 minutes.
Remove the prepared cakes from the mold onto the wire rack and leave to cool completely.
Beat soft butter until light airy mass.
Add condensed milk and cocoa, mix with a silicone spatula, then beat the chocolate cream with a mixer until smooth.
Assemble the cake: coat the cakes with cream and lay them on top of each other. Grease the sides of the cake and the top crust with a thin layer of cream. Place the chocolate cake in the refrigerator to set the cream.
Prepare the chocolate icing (ganache). To do this, break the chocolate and heat it in the microwave for 20-30 seconds. The main thing is not to overexpose.
Bring the cream to a boil and pour the hot cream over the chocolate. Stir until the chocolate is completely dissolved in the cream. Add butter, stir until smooth.
Pour homemade Prague cake with chocolate icing. Leave the cake on the wire rack to allow excess icing to a glass of the cake. Place the chocolate cake in the refrigerator to set the frosting, then transfer to a serving platter.
