  • 300 g wild arlic
  • 400 g flour
  • 4 egg (s)
  • 40 ml olive oil

Instructions

  1. Wash the wild garlic, pat dry and cut into very fine strips. Cook in a little water for a few minutes. Cook the wild garlic and the cooking water with a hand blender to make a puree and leave to cool.
  2. Mix the flour, beaten eggs, olive oil, the wild garlic mixture and the salt. First work with a dough hook, then with your hands into a smooth dough. If the batter is too dry, add a little water.
  3. Cover the dough and let it rest for 30 minutes. Then roll out the dough thinly and cut the desired pasta shape or process it with a pasta machine.
  4. Cook the pasta in boiling water.
