Sometimes you want some hearty and aromatic pastries, and this cake is just that. Honey cake with dried fruits and nuts turns out to be moderately moist, very aromatic thanks to spices and honey, and just very tasty.

Ingredients
Honey – 225 g
Milk – 150 g
Butter – 110 g
Eggs – 2 pcs.
Flour – 240 g (1.5 cups, 250 ml)
Baking powder – 1 teaspoon
Soda – 1/2 teaspoon
Prunes – 55 g
Dried apricots – 55 g
Walnuts (or others) – 60 g
Ground cinnamon – 1 teaspoon
Ground ginger – 1 pinch
Directions
Prepare your ingredients. You can use the dried fruit for this muffin that you have on hand (for example, figs, dates, or raisins). Likewise, hazelnuts, almonds, peanuts, etc. can be used instead of walnuts.
Pour dried apricots and prunes (or other dried fruits) with warm water for 5-10 minutes, then rinse thoroughly. Pat dry fruit on paper towels.
Coarsely chop the nuts with a knife. Slice dried fruits as well.
Combine honey and butter in a saucepan.
Heat the mixture over low heat to melt the butter. Remove the saucepan from heat and let the mixture cool slightly.
In a deep bowl, combine dry ingredients: flour, baking soda, baking powder, cinnamon and ginger. Mix thoroughly.
Preheat oven to 160 degrees. Pour milk into the mixture of honey and butter.
Whisk the eggs in a separate bowl and, while stirring, add the mixture of honey, butter and milk.
In a bowl of dry ingredients, make a hole and pour in the milk and honey mixture.
Mix thoroughly with a whisk. You should get a smooth, moderately thick dough.
Take a handful of dried fruits and nuts and set aside. Add the main part of the dried fruit to the dough and stir.
Line the cake pan (mine is 24x9x5 cm) with baking paper and fill with dough. Spread dried fruits and nuts on top (a handful set aside).
Bake a honey cake with dried fruits, nuts and spices (no sugar) in an oven preheated to 160 ° C for about 45-60 minutes. Be sure to check the readiness of the cake with a wooden skewer – if you pierce the cake in the center with it, it should come out dry and without traces of sticky dough. Remove the finished cake from the oven and cool on a wire rack.
