Ingredients

  • 1 kg carrot (s)
  • 3 tablespoon olive oil
  • 4 tablespoon honey
  • 2 tablespoon tarragon, fresher, chopped
  • some lemon juice
  • salt

Instructions

  1. Peel the carrots, quarter them and cut into pieces approx. 5 cm long. Heat the olive oil in a large pan and cook the carrots covered over a medium heat for about 10 minutes (or longer or shorter, depending on how you like to eat your carrots).
  2. Stir the honey into the still warm carrots and let it melt. Then mix in the tarragon and lemon juice and season the carrots with a little salt.
  3. Let the whole thing cool in a closed bowl and refrigerate for at least 1 hour.
