  • 1 honeydew melon (s)
  • 1 vanilla pod (s)
  • 1 can coconut milk, unsweetened, (400 ml)
  • 5 tablespoon palm sugar or brown sugar

Instructions

  1. Peel the melon and cut into bite-sized pieces. Put in the fridge for about an hour.
  2. In the meantime, halve the vanilla pod and scrape out the pulp with a sharp knife. Put the vanilla pulp, coconut milk and sugar in a saucepan and heat gently while stirring until the sugar has dissolved. Let the mixture cool down briefly and also put it in the refrigerator. Both must be well chilled.
  3. Before serving, place the chilled melon pieces in a serving bowl and pour the coconut milk over them.
  4. Tastes delicious, is very light and refreshing and is very easy to make.
