Ingredients

  • 800 g potato (s)
  • 20 g butter
  • 125 ml milk
  • 40 g clarified butter
  • 600 g ame meat
  • 3 onion (s)
  • 250 ml meat broth
  • 1 bay leaf
  • 2 clove (s)
  • salt and pepper
  • 1 cup crème fraîche
  • 1 apple
  • 20 g butter, liquid

Instructions

  1. Cook the potatoes, mash them, stir with the butter and hot milk.
  2. Heat the butter fat, fry the game in it. Cut the onions into rings, add to the game and deglaze with the meat stock. Season with bay leaf, cloves, salt and pepper. Let simmer for 20-30 minutes and thicken with crème fraiche.
  3. Peel the apple, cut out the core and cut into rings. Put a layer of game ragout in a baking dish, then layer mashed potatoes, game ragout, apple rings and again mashed potatoes one after the other.
  4. Drizzle 20 g of melted butter on the casserole. Bake in the preheated oven at 200 degrees (convection 180 degrees) for about 20 minutes.
