Ingredients

  • 1 onion (s)
  • 1 clove garlic
  • 1 tablespoon oil
  • 400 ml vegetable stock
  • 250 g lentils, red
  • 300 ml coconut milk
  • 1 lemon (s)
  • Curry powder
  • Turmeric or saffron
  • cinnamon
  • ginger, fresh
  • salt and pepper

Instructions

  1. Chop the onion and garlic and sauté. Add turmeric (or saffron) and curry powder and sauté briefly. Deglaze with vegetable stock. Add the lentils, coconut milk and ginger. Simmer on a low heat for 20 minutes. Season with cinnamon and lemon, pepper and salt.
  2. Depending on your taste, you can also omit the ginger or cinnamon. It goes well with flatbread.
