Ingredients

  • 0.25 ¼ head lettuce, green
  • 2 lettuce leaves (romaine lettuce)
  • 4 cherry tomato (s)
  • 1 tablespoon vinegar (balsamic vinegar)
  • 0.5 teaspoon ½ mustard, grainy
  • 4 tablespoon olive oil
  • 1 sprig rosemary
  • 0.5 slice ½ / n toast bread
  • 1 tablespoon pine nuts
  • 150 g cheese (youn soft oat cheese)
  • 1 teaspoon vinegar (raspberry vinegar)
  • some salt and pepper, black

Instructions

  1. Cut the romaine lettuce into fine strips, shred the lettuce. Halve the cherry tomatoes, mix everything in a large salad bowl.
  2. Mix the two types of vinegar as a dressing, add mustard, salt and black pepper and mix loosely into the salad together with 2 tablespoons of oil.
  3. Pluck rosemary leaves and cut toast into small cubes. Lightly fry both ingredients and the pine nuts in the remaining oil over low heat until the bread is crispy. Then spread over the salad.
  4. Remove the pan from the hob, cut the goat cheese into 1 cm thick slices and add to the oil that has remained in the pan. Put the pan back on the hob and let the cheese warm up at a low temperature. Caution, cheese shouldn`t melt. Arrange the finished slices on the salad and sprinkle with pepper.
  5. As a side dish, freshly baked bread with aioli or garlic butter.
