Italian Lemon Cookies

Ingredients

  • Lemon – 2 Pieces (you need the zest of two lemons and the juice of one lemon)
  • Butter – 100 grams (room temperature)
  • Sugar – 160 Grams
  • Eggs – 2 Pieces
  • Baking powder – 15 Grams
  • Powdered sugar – 100 Grams
  • Flour – 300 Grams

Directions

  1. Prepare your ingredients.
  2. Remove the zest from two lemons.
  3. Squeeze out the juice of one lemon.
  4. Beat eggs into a mixing bowl, add sugar.
  5. Whisk until creamy.
  6. Add soft butter, pour in lemon juice, beat again.
  7. Combine flour with baking powder, stir.
  8. Pour in the flour mixture, knead the dough, it is best to do this with a mixer, a hook attachment.
  9. The dough is very soft and tender.
  10. Transfer the dough to a bag, put it in the refrigerator, or in the freezer for 30-40 minutes.
  11. Pinch off a piece the size of a walnut from the dough, roll into a ball and roll in powdered sugar.
  12. Place the cookies on a baking sheet, spread well apart from each other. Lay out 16 pieces on a sheet. In total, 32 pieces are obtained.
  13. Bake in the oven at 180 degrees for 15 minutes.
  14. The biscuits are extraordinary, aromatic, with a refreshing lemon sourness.
