- Prepare your ingredients.
- Remove the zest from two lemons.
- Squeeze out the juice of one lemon.
- Beat eggs into a mixing bowl, add sugar.
- Whisk until creamy.
- Add soft butter, pour in lemon juice, beat again.
- Combine flour with baking powder, stir.
- Pour in the flour mixture, knead the dough, it is best to do this with a mixer, a hook attachment.
- The dough is very soft and tender.
- Transfer the dough to a bag, put it in the refrigerator, or in the freezer for 30-40 minutes.
- Pinch off a piece the size of a walnut from the dough, roll into a ball and roll in powdered sugar.
- Place the cookies on a baking sheet, spread well apart from each other. Lay out 16 pieces on a sheet. In total, 32 pieces are obtained.
- Bake in the oven at 180 degrees for 15 minutes.
- The biscuits are extraordinary, aromatic, with a refreshing lemon sourness.
