Ingredients

  • 300 g spelled flour
  • 100 g whole wheat flour
  • 12 g yeast
  • 250 ml water, lukewarm
  • 3 tablespoon olive oil
  • 1 tablespoon, leveled salt
  • some Milk

Instructions

  1. Put the spelled and whole wheat flour in a bowl and mix. Make a well in the middle and crumble the yeast into it. Add water, oil and salt and knead everything into a smooth dough. Let rise in a warm place for about 1 hour.
  2. Knead the dough again and put it on a baking sheet lined with baking paper (I always put the dough in a 24-inch springform pan, the bread then stays in shape) and let rise for another 45 minutes. Slightly cut into the bread with a sharp knife from the middle to the edge and let rise for another 45 minutes.
  3. Brush the surface of the bread with a little milk. Place a bowl of water on the bottom of the oven. Bake the bread in the oven preheated to 240 ° C for 35 - 40 minutes. Then take it out of the oven and let it cool on a rack.
