Japanese Cold Buckwheat Noodles with Dip

Ingredients

600 g noodles (soba, Japanese buckwheat noodles)
4 spring onion (s)
1 nori sheet
Possibly wasabi paste, Japanese, green, from the tube or powder

For the sauce:

1 ½ cup water
0.33 cup sake, alternatively white wine or mild sherry
1 tablespoon sugar
0.33 cup soy sauce, Japanese
0.33 teaspoon Dashi, Japanese instant fish stock

Japanese Cold Buckwheat Noodles with Dip

Instructions

Bring all the ingredients for the sauce to the boil briefly, then simmer for 2-3 minutes over low heat. Cool in a water bath and then place in the refrigerator for at least 30 minutes.
Cut the spring onions into fine rings. If available, cut the nori into thin strips with scissors.
Cook the soba in plenty of boiling water according to the instructions on the packet, then put it in a sieve and chill it cold. Rinse well, then drain.
Place the pasta in 4 plates (if necessary sprinkle nori strips over them), distribute the sauce in 4 dip bowls.
Everyone mixes spring onions and wasabi (careful, spicy!) Into the dip sauce and dips the noodles (stick for stick or fork for fork) briefly into the sauce. A typical summer meal in Japan. And of course, when eating sauces, you can hear the slurp in style.
