Ingredients

  • 100 g rice
  • 3 small potatoes (triplets)
  • 1 carrot (s)
  • 1 small onion (s)
  • 1 cube spice mixture (golden curry)
  • 150 ml vegetable stock

Instructions

  1. Prepare the rice according to the instructions on the packet. Cut the vegetables into large pieces and cook them in the vegetable stock until they are soft. Then add a cube of golden curry (I got mine from the Asian market) and let the sauce thicken.
  2. In Japan these curries are also very often prepared with these cubes and they are available in a wide variety of flavors, variants, degrees of spiciness and designs. I used the mild cubes from Golden Curry. They should be available in every Asian market. In addition, this variant is even vegan.
  3. The dish is prepared super quickly and really delicious.
