Ingredients

  • 400 g chicken breast fillet (s)
  • 4 tablespoon soy sauce
  • 1 tablespoon maple syrup, alternatively sugar
  • 4 tablespoon sherry, dry
  • 3 tablespoon oil, neutral
  • 50 g cashew nuts
  • chives
  • 1 cup rice
  • 1 teaspoon curry powder
  • 1 teaspoon butter

Instructions

  1. Pierce the fillets several times with a fork. Mix the syrup, soy sauce and sherry together. Heat the oil in a pan and fry the fillets for about 3 minutes on each side. Drain the oil, add the soy sauce and cover the pan well with the lid. Braise over the lowest heat for about ten minutes, turning the meat once. The sauce is almost completely absorbed.
  2. In the meantime, cook the rice according to the instructions. Take the meat out of the pan and cut diagonally into 1 cm thick slices. Drain the rice and mix with the butter and curry. Put both on a plate. Pour the remaining sauce over the meat, sprinkle cashew nuts and chives over the top.
