Ingredients

  • 150 g berries (Josta), washed and plucked
  • 125 g berries, e.. currants, raspberries, washed and plucked
  • 50 ml milk
  • 2 packs vanilla sugar
  • 250 g mascarpone
  • 100 g suar
  • 2 teaspoons locust bean gum
  • 200 ml whipped cream

Instructions

  1. Puree the berries with the milk and vanilla sugar. Mix the puree with the mascarpone well and add the sugar. Add the locust bean gum and stir in well. Whip the whipped cream until stiff and fold in carefully.
  2. Place the ice cream mass in the refrigerator (approx. 5 minutes) until the ice cream machine is installed and ready for use. Then let the ice machine work for about 40 minutes.

  4. You can also use other berries than those mentioned here. The indicated amount of sugar should then be adjusted.
