Instructions

  1. Dough:
  2. Put the flour in a mixing bowl, stir in the sugar and salt. Add the cold butter cut into 1 cm cubes. Stir with the hand mixer until it has a consistency like oatmeal, muesli, etc. Add 4 - 6 tablespoons of cold water. Keep stirring until you have a smooth dough. Roll out the dough a little and place in cling film. Put in the fridge for 1 hour.
  3. Preheat the oven to 200 ° C.
  4. Roll out the dough around 4 mm thick, about 5 cm larger than the shape. Grease the baking pan with butter. Pour the dough into the baking pan and press down a little on the corners and sides. Leave about 0.5 cm protruding from the top of the mold and press in at an angle of 1.5 cm with the back of the knife to create a nice edge. Poke holes in the bottom with the fork. Place baking paper in the mold, press lightly against the dough and pour in the dried legumes. Bake for 8 - 9 minutes. Remove the baking paper with the beans and bake for another 2-3 minutes. Take out of the oven.
  5. Covering:
  6. Core, peel and cut 600 g apples into thin, fine slices. Put in a bowl with 1 teaspoon lemon juice and 2 tablespoons sugar. Mix gently so that the slices stay whole.
  7. Core, peel and chop 1 kg of apples. Put in a pan, put the lid on and cook at a not too high temperature for about 20 minutes. Stir every now and then. When the apples have crumbled well, add the remaining ingredients. Then bring to the boil until the apple sauce is nice and thick.
  8. Preheat the oven to 180 ° C.
  9. Pour the sauce on the baked base. Spread the apple slices over them in a spiral and overlapping. Bake in the upper part of the oven for about 30 minutes, or until the apples are lightly brown.
  10. Glaze:
  11. Put the apricot jam and the sugar in a saucepan over normal heat to melt and pour onto the finished cake.
