Ingredients

  • 8 slices toast bread, wholemeal
  • 1 avocado (s), ripe
  • 2 large tomato (s)
  • 1 large onion (s), finely chopped
  • 6 tablespoon olive oil
  • 5 tablespoon tomato paste
  • 1 teaspoon basil, dried
  • salt and pepper

Instructions

  1. Peel the avocado, remove the stone and cut the pulp into small cubes. Wash and core the tomatoes and also finely dice them. Lightly salt both.
  2. Heat 5 tablespoons of oil in a small pan and sauté the onion briefly. Add tomato paste and stir well, season with basil, salt and pepper.
  3. Brush the toasted toast slices with the onion mixture, add the avocado and tomato cubes and finally drizzle with the remaining olive oil.
  4. Also tastes good on toasted baguette slices.
