Kefir Pie with Kiwi, Banana and Pineapple

Today we will cook a tall, fluffy and large pie on kefir. I baked this cake several times, it won me over with its simplicity, amazing taste and aroma! The pie is filled with kiwi, banana and canned pineapple. You can safely replace them with other fruits or berries of your choice, taste and season.

Ingredients

  • Kefir (room temperature) – 180 ml
  • Chicken eggs – 3 pcs.
  • Refined sunflower oil – 100 ml
  • Sugar – 180 g
  • Wheat flour – 320 g
  • Baking soda – 0.5 teaspoon
  • Baking powder – 1.5 teaspoon
  • Banana – 1 pc.
  • Kiwi – 2 pcs.
  • Canned pineapple – 180 g
  • Powdered sugar (for decoration) – 0.5 tbsp

Directions

  1. Combine eggs and sugar in a mixing bowl or beating bowl.
  2. Beat eggs and sugar until fluffy.
  3. Add room temperature kefir and refined sunflower oil.
  4. Beat the dough base for 30 seconds.
  5. Combine flour with baking soda and baking powder and sift into the base of the dough.
  6. Knead into a homogeneous kefir pie dough. You may need a little more or less flour, the finished dough should not be too thick.
  7. Prepare your fruit. Peel the kiwi and banana. Drain the syrup from the canned pineapple. Cut banana into slices, kiwi into slices, pineapple into cubes.
  8. Line the bottom of a dish (24 cm in diameter) with baking parchment. Lay out about half of the dough (I got a little more), level the surface with a spatula.
  9. Put slices of kiwi, banana and pineapple on the dough.
  10. Cover the fruit with the remaining dough.
  11. Bake the pie on kefir, with fruit filling, in an oven preheated to 180 degrees for 45 minutes.
  12. Remove the finished fruit pie from the mold and cool on a wire rack.
    Then sprinkle the surface of the cooled cake with icing sugar. If you use a stencil, it will be more beautiful.
  13. Kefir pie with kiwi, banana and pineapple, ready. Cut it into portions and serve.
