Ingredients

  • 3 cucumber (s), approx. 700 g
  • 3 zucchini, approx. 700 g
  • 3 chilli pepper (s), green
  • 2 tablespoon peppermint, dried
  • 1 teaspoon basil, dried
  • 1 lemon (s), organic
  • 1 bay leaf
  • 1 teaspoon sugar, raw
  • 1 teaspoon onion (s), dried
  • 1 teaspoon garlic, dried
  • 2 teaspoons black pepper
  • 2 teaspoons salt
  • 2 teaspoons fish sauce
  • 2 tablespoon maple syrup
  • 100 ml vinegar
  • 100 ml water
  • 1 pinch (s) allspice

Instructions

  1. Cut the zucchini, cucumber and chillies into small pieces. Finely grate the peel of the lemon and then squeeze the lemon.
  2. Put all ingredients in a deep saucepan and simmer for 1 hour. Remove the bay leaf and puree everything. Simmer for another 30 minutes and then pour into glasses. Goes well with BBQ and white meat.
