I made khachapuri with suluguni cheese, from kefir dough. It is very convenient to bake khachapuri in a pan, especially in summer, when you don’t want to turn on the oven. Bon Appetit!

  • Flour – 500 g
  • Kefir 2.5% – 450 ml
  • Suluguni cheese – 450 g
  • Butter – 50 g
  • Salt – 0.5 teaspoon.
  • Sugar – 1 teaspoon
  • Soda – 0.5 teaspoon.

  1. Sift flour into a deep bowl. Add salt and sugar.
  2. Make a depression in the flour and pour in kefir. Add soda.
  3. Knead a soft dough with kefir. Wrap the dough in foil or bag and leave on the table for 30 minutes.
  4. Then divide the dough into 3 parts (4-5 parts can be used). Roll each part with a rolling pin to make a circle.
  5. Put cheese grated on a coarse grater in the middle of the circle.
  6. Gather the edges of the dough in the center so that the cheese is inside, and pinch.

  7. Turn the “bag” of dough with the cheese seam down.
  8. Roll out into a thin cake.
  9. Fry khachapuri in a dry frying pan for 2-3 minutes on each side. If the cake inflates during frying, pierce it with a fork, the excess air will come out.
  10. Transfer ready-made khachapuri to a plate and brush with melted butter. Stack khachapuri on top of each other.
  11. Eat khachapuri hot. But on the second day they are also delicious, I heat them up in the microwave.
