Ingredients

  • 300 g chicken breast fillet (s), shredded
  • 100 g peanuts, salted
  • 1 leek
  • 1 red pepper (s)
  • 3 kiwi (s)
  • 200 ml coconut milk
  • 2 tablespoon peanut butter (heaped )
  • 2 tablespoon soy sauce
  • Paprika powder, hot as rose
  • salt and pepper
  • Oil for frying

Instructions

  1. Wash the bell pepper and cut into large pieces and the leek into rings. Heat the oil strongly in a pan. Pepper the sliced chicken and fry vigorously on all sides. Lower the heat to medium and add the peanut butter to the pan. Melt the peanut butter and mix it with the meat.
  2. Add paprika and leek, mix everything and let fry until the consistency has changed a little. In the meantime, peel the kiwi fruit and cut into small, flat pieces.
  3. Put the peanuts in the pan and fry for about 3 minutes. Deglaze with the coconut milk and add the soy sauce. Bring the sauce to the boil and season with pepper, hot paprika powder and a little salt. Add the kiwis to the pan, mix in and simmer for another 7 minutes.
  4. Rice goes well with this. You can also replace the kiwifruit with mango, which of course changes the taste a lot.
