Kiwi and White Chocolate Muffins

Homemade kiwi and white chocolate muffins are delicious and slightly moist. The sourness of kiwi and the sweetness of white chocolate complement each other harmoniously, which is especially noticeable in this recipe. Kiwi puree not only serves as a juicy impregnation for muffins, but is also added to the dough along with white chocolate chips.

Ingredients

  • Kiwi – 1 pc.
  • White chocolate – 50 g
  • Flour – 100 g
  • Egg – 1 pc.
  • Butter – 60 g
  • Powdered sugar – 50 g
  • Milk – 4 tbsp
  • Baking powder – 0.5 teaspoon
    *

For impregnation:

  • Kiwi – 1 pc.
  • Powdered sugar – 1 tbsp

Directions

  1. Prepare all the ingredients needed to make the Kiwi White Chocolate Muffins. Turn on the oven to heat up to 180 degrees.
  2. Sift flour, icing sugar and baking powder into a bowl.
  3. Chop the white chocolate into small crumbs and add to the dry ingredients mixture.
  4. Stir.
  5. In another bowl, combine milk, melted butter, and egg.
  6. Ripe kiwi, peel and mash with a fork or hand blender. Add the kiwi puree to the liquid bowl.
  7. Stir.
  8. Combine liquid and dry ingredients.
  9. Stir until smooth, cakey.
  10. Now prepare muffin baking tins by lining each one with paper capsules or greasing with butter. Divide the dough into tins. There are 6 muffins in total.
  11. Bake the kiwi and white chocolate muffins in the oven for about 25 minutes. Remove the finished muffins from the molds and let them stand for 5 minutes.
  12. While the muffins have cooled slightly, prepare the impregnation. To do this, peel and puree ripe kiwi with a fork or blender. Combine kiwi puree with powdered sugar and stir.
  13. Place about 2-3 teaspoons of kiwi puree on the surface of each muffin and leave the muffins to cool completely.
  14. Kiwi and white chocolate muffins are ready.
