• 4 kiwi (s), ripe, peeled
• 1 ripe kiwi (s), peeled, base removed, cut into 4 thick slices
• 1 bunch mint, leaves torn off
• 4 tablespoon lime juice, freshly squeezed
• 600 ml bitter lemon, ice cold

Instructions

1. Puree the kiwis, mint leaves and lime juice very finely with a blender, place in tall, narrow glasses, fill with bitter lemon and serve each glass decorated with a kiwi slice attached to the edge of the glass.
