Ingredients

  • 4 kohlrabi or 1 large white radish or both
  • 4 tablespoon soy sauce, dark
  • 2 tablespoon honey
  • 4 tablespoon white wine vinegar or lime juice
  • 3 tablespoons water
  • 6 tablespoon oil (rice oil or 3 rapeseed oil + 3 sesame oil)
  • 2 clove (s) garlic, finely chopped or pressed
  • Sesame, white, toasted
  • salt and pepper
  • Chilli powder

Instructions

  1. Peel the vegetables you have selected and use a vegetable grater to grate them as finely as you like in a large bowl (thin slices are also possible).
  2. For the dressing, use a spoon or whisk to stir all the other ingredients except the sesame. Mix the dressing very well with the grated raw vegetables. Then try and, if necessary, add salt, pepper and chilli to taste. Just before serving, sprinkle a few toasted sesame seeds over each serving.
  3. The dressing also goes well with carrot salad and also well with white cabbage, but here you should let the salad steep in the refrigerator overnight.
