Instructions

  1. You can get the mushroom in our Kombucha group or you can buy it. There are numerous providers on the Internet. You always get the mushroom with liquid.
  2. On the evening before starting, boil 10 liters of water and add 50g of green tea to the liquid.
  3. Let it steep for 15 minutes. Then remove the tea leaves and stir the table sugar into the hot tea until the sugar has dissolved.
  4. The next day: The tea should have cooled down. Pour the tea into the container provided and add the mushroom and the base. The mushroom does not like heat above 25 degrees.
  5. With 10 liters of tea it should be at least 1 liter of liquid. With 20 liters of tea 2 liters.
  6. You can only use plastic spoons, plastic sieves, etc. Definitely not metal.
  7. The vessel must be PE standardized or you can use a rum pot.
  8. Only normal household sugar should be used.
  9. If you like to drink the kombucha sweet, you can also use 120g sugar per liter of tea. However, it shouldn`t be less than 70g sugar per liter of tea.
  10. The fermentation vessel is then covered with a cloth and a rubber band is tied around the vessel. Under no circumstances should it be closed with a lid, as the fungus is alive and needs oxygen.
  11. Now the fermentation liquid is left to ferment for 10-15 days in a quiet and draft-free place. There should be no plants in the room because of the spores.
  12. After the fermentation time, the kombucha is poured through a plastic sieve into clean glass bottles that are closed with a cork.
  13. Store at room temperature and put the bottle you want to drink in the refrigerator.
  14. The kombucha that you prepare yourself is very healthy and tastes wonderfully refreshing.
  15. The evening before bottling, you boil 10 liters of tea again and start over with the recipe.
  16. You can raise your own kombucha babies by cutting off a piece of the mushroom after a few weeks and placing it in another container, always with liquid and tea.
  17. After 3 months, the old mushroom should be disposed of and the newly grown mushroom should be used.
  18. But you don`t have to throw away the old mushroom. It can be used for skin care.
