Kubdari – Khachapuri with Meat Ingredients

For the dough:

  • Milk – 200 g
  • Water – 400 g
  • Dry yeast (fast) – about 6 g
  • Vegetable oil – 1 tbsp
  • Chicken egg – 1 pc.
  • Flour – how much will the soft dough take (7-9 glasses)
  • Salt

Kubdari – Khachapuri with Meat

For filling:

  • Meat – 1 kg
  • Onions – 2-3 pcs.
  • Shambhala (fenugreek) or hops-suneli – 1 teaspoon.
  • or other spices to taste
  • Chilled butter – 100 g
  • Ground pepper (I have red)
  • Salt

Kubdari – Khachapuri with Meat Instructions

  1. Knead a soft dough from our ingredients. Let it fit.
  2. Meanwhile, we make minced meat. Grind the meat and peeled onions in a meat grinder. Add utskho-suneli, salt, spices, pepper and butter. We mix everything thoroughly. We leave for half an hour.
  3. When the dough comes up, put it on the board, tear off the pieces, form balls, cover with a towel.
  4. We take one ball, roll it out a little, put the meat in the middle. There is more meat, 🙂 we do not save. We close the cake and begin to roll the kubdari with our hand.

  5. Lubricate with an egg, beaten with milk. Put in a preheated oven, bake kubdari for 20-25 minutes. at a temperature of 170-180 degrees.
  6. Grease the finished khachapuri with meat abundantly with butter, let it cool in a pile.
