Ingredients

  • 1 clove garlic
  • 250 g lamb`s lettuce
  • 75 g parmesan cheese
  • 150 g bacon, mixed

For the sauce:

  • 1 egg yolk
  • 2 tablespoon lemon juice
  • 1 teaspoon mustard
  • salt
  • Pepper, freshly ground
  • 2 tablespoon olive oil
  • sugar

Instructions

  1. Peel and halve the garlic and rub it in a salad bowl. Clean the lamb`s lettuce and wash it very thoroughly. Cut the parmesan into thin slices with a peeler or grate roughly. Fry the diced bacon in a non-fat frying pan over low heat until crispy. Take the bacon out of the pan and let it drain on kitchen paper. Save the frying fat.
  2. For the sauce, whisk the egg yolks, lemon juice and mustard together and season with salt and pepper. Beat the olive oil and the frying fat with a whisk. Season the sauce with a pinch of sugar.
  3. Mix all the salad ingredients and pour the sauce over them.
