Ingredients

  • 150 g lamb`s lettuce
  • 2 orange (s)
  • 1 piece (s) parmesan cheese
  • salt
  • pepper
  • sugar
  • 3 tablespoon white wine vinegar
  • 4 tablespoon sunflower oil
  • 1 tablespoon oil, (grape seed oil)
  • 1 shallot (s)
  • possibly balsamic vinegar

Lamb`s Lettuce with Orange Fillets

Instructions

  1. Clean lamb`s lettuce, wash, drain or spin if necessary.
  2. Cut off the peel of the oranges and cut into the inner walls with a sharp knife to remove the fillets. Mix a dressing from vinegar, salt, pepper and sugar until the spices have dissolved, then pour in the two oils and stir. Season again to taste.
  3. Peel the shallot and cut into fine rings. Arrange the lamb`s lettuce on plates, spread the orange fillets and shallots on top and then use a peeler to slice the parmesan cheese over them. Drizzle the whole thing with the dressing.
  4. For non-vegetarians, you can put raw ham in thin slices on top. Serve with a baguette.
