Instructions
Finely chop the rosemary leaves and chop the bacon. Fry in olive oil until the fat melts off the bacon and is crispy.
Add minced meat to a saucepan and simmer over medium heat until moisture evaporates.
Grate the Cheddar cheese on a coarse grater. Cut carrots and celery into small cubes. Chop the onion. Send the vegetables to the minced meat and fry for 15 minutes, until they become soft.
Add the tomatoes by crushing them with a spoon. Pour water into each jar and add to the pot as well. Dissolve a spoonful of tomato paste. Mix everything well and leave on low heat for about 2 hours, not forgetting to stir. When everything thickens, salt and remove from heat. Part of the sauce can be poured into bags and frozen.
To prepare the white sauce, finely chop the leeks and send them to a saucepan with 2 tablespoons of oil and 1 bay leaf. Season with a pinch of salt and black pepper. Simmer over low heat for 30 minutes, adding water from time to time, the onions are not burnt. Add flour and stir with a whisk to avoid lumps. Stir constantly, pour in the milk. Bring to a boil and cook for 5-10 minutes, stirring regularly to achieve the desired thickness.
Transfer the sauce to a blender to make it smoother and silkier. Add some of the grated cheese and nutmeg. Salt to taste.
Preheat the oven to 180 ° C. On the bottom of the baking dish, pour a few spoons of stew, distribute evenly, then a spoonful of white sauce, lay the lasagna sheets on top.
