Lavash Benderiki with Cottage Cheese and Cabbage

Benderiki is thin spring rolls rolled in a special way (triangle) and fried in a skillet in egg batter. This is a traditional Ukrainian dish. It is not difficult to make benderiki at home, you would have ready-made pancakes and filling for them at hand. There are no ready-made pancakes – also not a problem, they can be replaced with lavash. Today I have lavash benderiki with cottage cheese and fresh cabbage. Fast and delicious!

Lavash Benderiki with Cottage Cheese and Cabbage Ingredients

  • Armenian thin lavash – 2 pcs.
  • Eggs – 5-6 pcs.
  • Vegetable oil – 150ml

For the 1st filling:

  • Cottage cheese – 250 g
  • Eggs – 1 pcs.
  • Salt
  • Dill greens – 1 tablespoon chopped spoon

For the 2nd filling:

  • Cabbage – 0.5 head of cabbage
  • Bulb onions – 1 pc.
  • Salt
  • Ground black pepper
  • Parsley and dill
  • Vegetable oil – 2 tbsp

It is wrong to think that benderiki are cooked only with raw minced meat. They are prepared with cottage cheese, cabbage, mushrooms, potatoes.

  1. Add egg, dill, salt to cottage cheese.
  2. Knead and mix everything well.
  3. Cut the lavash across into strips 6-7 cm wide.
  4. Spread the filling on the edge of the lavash strip.
  5. Fold in a triangle.
  6. Bend and fold again into a triangle. Cut off the benderik. If the length of the strip allows, you can bend it again. Two benders are obtained from one strip.
  7. And from one lavash – 13-15 benderiks.

  8. Beat 3 eggs well.
  9. Heat oil in a frying pan. Dip benderiki in beaten eggs and put in hot butter. Fry benderiki until golden brown on both sides.

  10. For the second filling, cut the onion into quarters. Chop the cabbage, salt and rub a little with your hands. Chop the greens finely.
  11. At 2 st. tablespoons of vegetable oil, fry the onion until it begins to golden. Add cabbage to the onion and fry, stirring occasionally, for 10-12 minutes. The cabbage should become soft and juicy. If necessary, add salt to taste, pepper. Add herbs and mix well. The filling is ready.
  12. And then cook in the same way as benderiki with cottage cheese. Put the filling on the sliced pita bread, wrap it in a triangle, dip the benderiki in beaten eggs, and fry. The most delicious benderikas are fresh and hot. Bon Appetit!
