Lavash Casserole with Rice, Cauliflower, Broccoli and Bell Pepper

An original dish with lots of vegetables – an appetizing pita casserole stuffed with cauliflower, broccoli, bell pepper, rice, and green onions, with sour cream sauce and cheese. Rice and cheese provide satiety, vegetables – juiciness, and green onions – savory taste.

Ingredients

  • Thin lavash – 1-2 sheets
  • Hard cheese – 80 g
  • Vegetable oil (for lubricating the mold) – 1 tbsp

For filling:

  • Rice – 50 g
  • Cauliflower – 300 g
  • Broccoli cabbage – 60 g
  • Bulgarian pepper – 60 g
  • Green onions – 1 bunch
  • Egg white – 1 pc.
  • Garlic – 2-3 cloves
  • Salt to taste
  • Vegetable oil for frying – 2 tbsp

For the sauce:

  • Sour cream – 100 g
  • Yolk – 1 pc.
  • Vegetable oil – 1 tbsp
  • Ground coriander – 1 teaspoon
  • Ground nutmeg – 1 pinch
  • Ground turmeric – 1 pinch
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. We prepare products according to the list. Peel the bell pepper from the stalk and seeds. We disassemble cauliflower and broccoli into inflorescences. Peel the garlic.
  2. We wash the rice and pour 100 ml of water in a saucepan (the approximate proportion of rice and water is 1: 2, respectively). Bring to a boil and cook the rice for 10-15 minutes, until the cereal is soft and the water is absorbed. Then put the rice in a fine sieve and rinse with cold water.
  3. In a separate saucepan, bring about 1 liter of water to a boil. We send the cauliflower to boiling water and cook for 5-7 minutes. We take out the boiled cauliflower from the water using a slotted spoon.
  4. Throw the broccoli into the boiling water left over after cooking the cauliflower. Cook broccoli for 2-3 minutes. Then we drain the water and pour cold water over the broccoli (this will help the cabbage retain its bright color).
  5. Cut the garlic into slices, and the bell pepper into strips.
  6. Heat 2 tablespoon in a frying pan. tablespoons of vegetable oil. We spread the chopped garlic and, stirring it, fry it over medium heat for about 2 minutes. Then carefully remove the fried garlic from the pan – it has already given its aroma to the oil and we will no longer need it.
  7. Add cauliflower and bell pepper to the pan. Stir, fry over medium heat for 2-3 minutes. Then add broccoli and stir. Cover and cook vegetables for another 2-3 minutes.
  8. We turn on the oven to heat up to 200 degrees. Finely chop the green onion with a knife. Break the egg and carefully separate the whites from the yolk. Put the yolk aside (you will need it for the sauce).
  9. In a deep bowl, combine boiled rice and fried vegetables. Add egg white, 1 tablespoon. a spoonful of vegetable oil and salt. We mix.
  10. Cooking the sauce. To do this, combine sour cream and egg yolk in a separate bowl. Add coriander, nutmeg, turmeric, salt, and pepper. We mix.
  11. We begin to collect the casserole. Rub the cheese on a coarse grater. We cut the pita bread into three unequal parts: one large one so that the edges of the pita bread hang from the sides of the baking dish (I have a rectangular shape measuring 16×22 cm), and 2 identical smaller pieces – by the size of the bottom of the shape.
  12. Grease the bottom of the mold with vegetable oil and line it with most of the pita bread. We spread about a third of the filling and level it.
  13. Put on the filling and carefully distribute about 1/4 of the sauce. Sprinkle with about 1/4 of the cheese. Cover with the second part of the lavash. We spread the same amount of filling, sauce, and cheese. Cover with the third part of lavash. Repeat the layers of filling, sauce, and cheese.
  14. We carefully wrap the hanging edges of the pita bread up. Grease with the remaining sauce and sprinkle with cheese. We send it to the oven, preheated to 200 degrees, for 20 minutes.
  15. Lavash casserole with rice, cauliflower, broccoli, bell pepper, and green onions is ready. Let it cool a little, cut into portions, and serve.
