Lavash Envelopes with Boiled Eggs and Green Onions

Simple and tasty food – ruddy pita envelopes with boiled eggs and green onions. If you boil eggs in advance, this breakfast can be prepared in just 5 minutes. Fast and easy!
Cooking the filling. Eggs (3 pcs.) Put in a saucepan, fill with water, put on heat and bring to a boil. Reduce heat and cook eggs for about 8 minutes. Then we cool the boiled eggs in cold water.
Next, peel the eggs and cut them into small cubes.
We wash and dry the green onions. Cut off the white part (we do not need it), and finely chop the green feathers.
In a frying pan, heat half the vegetable oil (4 tablespoons).
Combine the chopped eggs and green onions in a deep bowl. Pour in heated vegetable oil.
Add salt, ground pepper and mix.
The filling for pita bread is ready.
Cut a sheet of pita bread into 4 equal parts. Lavash dries very quickly, so we put the sliced quarters of lavash in a bag, and take one at a time during cooking.
Divide the prepared lavash filling into 4 parts. We spread 1 part of the filling on a quarter of pita bread, retreating about 3-4 cm from the edge. Then we turn the edge of the pita bread over the filling.
Tuck the side edges of the pita bread.
We fold pita bread to make an envelope. We continue to fold the envelope until the seam (free edge) is at the bottom.
In this way, we fold all four envelopes.
Break the remaining raw egg into a bowl and beat it with a fork until smooth. All pita bread envelopes with filling are alternately dipped into the egg from all sides.
Preheat the pan with the remaining vegetable oil (4 tablespoons). Put the envelopes in the heated oil and fry over medium heat for about 1-2 minutes on each side, until golden brown.
If desired, the fried envelopes can be laid out on a paper napkin to absorb the excess oil.
Ruddy pita envelopes with boiled eggs and green onions are ready.
These envelopes are equally good both hot and cold.
