Lavash Envelopes with Cottage Cheese, Corn, Cucumber and Herbs

A simple recipe for a hearty snack or breakfast – lavash envelopes with cottage cheese, corn, and herbs. Such envelopes from pita bread with filling are prepared quickly and easily – in a pan.

Ingredients

  • Thin lavash – 3 pcs. (10×30 cm)
  • Cottage cheese – 100 g
  • Cucumber – 1 pc. (70 g)
  • Canned corn – 30 g
  • Fresh parsley – 3-4 sprigs (10 g)
  • Fresh dill – 3-4 branches (10 g)
  • Green onions – 5-6 branches (20 g)
  • Egg – 1 pc.
  • Milk – 2 tbsp
  • Dried Provencal herbs – ¼ teaspoon
  • Salt to taste
  • Ground black pepper – to taste

From the specified amount, I got three envelopes from pita bread with a filling.
I used three strips of pita bread 10×30 cm in size. If you have a large sheet of pita bread, cut it into such strips.

Directions

  1. Cooking the filling. Wash the cucumber, dry, and cut into small strips.
  2. Put the cottage cheese in a deep bowl and knead with a spoon or fork, breaking the lumps. Add the sliced cucumber and mix.
  3. Wash the dill, parsley, and green onions, dry, and chop finely with a knife. Optionally, leave one sprig of parsley for decoration.
  4. Add chopped herbs to a bowl to the curd with cucumber.
  5. Drain the liquid from canned corn and send it to a bowl. Add salt and pepper.
  6. Mix thoroughly. The filling for pita bread is ready.
  7. We are preparing for a lion. Combine egg, milk, and Provencal herbs in a separate bowl.
  8. Mix thoroughly.
  9. We collect envelopes. To do this, put 1 tablespoon on the edge of the pita bread strip a spoonful of filling.
  10. We wrap the edge of the pita bread over the filling with a triangle. We wrap the pita bread a second time. Thus, we roll up the pita bread with the filling to the end, until a triangular envelope with the filling inside is formed.
  11. We do the same with the remaining pita bread and filling.
  12. Heat vegetable oil in a skillet over medium heat. We dip all the envelopes from pita bread one by one into the egg mixture.
  13. We put the pita envelopes in a frying pan with heated oil and cover them with a lid.
  14. Fry pita bread envelopes with filling over medium heat for about 2 minutes on each side, until golden brown.
  15. Put the fried envelopes on a paper towel for a short time so that the excess oil is absorbed.
  16. Lavash envelopes with a juicy filling of cottage cheese, corn, cucumber, and greens are ready. If desired, we serve them to the table, decorating them with a sprig of parsley.
