If you want to enjoy delicious fragrant homemade cakes, but you don’t want to do the dough at all, then you can use the wonderful recipe for pita bread roll with cherries. Quickly and without rolling out the dough, you will get a flaky roll with a bright aromatic berry filling that does not spread during baking. Try to cook!
Ingredients
Cherries – 800 g (weight of pitted cherries – 600 g)
Lavash – 2 pcs. (total weight – 230-250 g)
Sugar – 250 g
Sour cream – 70 g
Eggs – 2 pcs.
Refined sunflower oil – 50 ml
Starch – 50 g
Powdered sugar (for sprinkling) – 1 tbsp
Directions
We prepare the necessary products. Choose lavash that is not too salty. I used fresh cherries, but frozen cherries will do. Consider the length of the pita bread so that the roll fits completely on the baking sheet.
We take out the seeds from the cherries. You should make 600 g of pitted cherries. Put the cherries in a saucepan and cover with sugar.
We put the pan on low heat and, stirring constantly so that the cherries do not burn, cook for about 5 minutes, until the cherries are juiced and the sugar dissolves. It is not necessary to bring to a boil.
In a bowl, combine the starch and 60 ml of water.
Stir until smooth so that no lumps remain.
Pour the starch into a saucepan with cherries in a thin stream and, stirring constantly, cook until thickened, about 3 minutes.
As soon as the cherries thicken, turn off the heat and leave to cool. We turn on the oven to heat up to 180 degrees.
Break the eggs into a bowl, add sour cream and vegetable oil.
Beat eggs with flour, sour cream and vegetable oil with a whisk until smooth.
With the resulting mixture, we completely lubricate one pita bread. I have pita bread 50×37 cm in size. We do not grease too much so that the roll does not soften and then break.
Evenly distribute half of the cherry filling over the pita bread, leaving two side edges and one long edge without cherries (not reaching about 4 cm).
Top with the second pita bread.
We also grease the second pita bread with an egg mixture.
Put the remaining cherries on top of the second pita bread.
We fold one long edge without filling and two side edges.
After that, roll up the pita bread from the side of the long folded edge into a tight roll.
Here’s a roll turned out.
Cover the baking sheet with parchment and lay out the roll with the seam down.
Lubricate it from all sides with an egg mixture.
We send the roll into an oven preheated to 180 degrees for 15-20 minutes, until a golden brown crust forms.
Leave the finished roll to cool. It will be easier to cut when completely cooled. Sprinkle the cooled lavash roll with cherries with icing sugar and cut into pieces.
