Lazy Dumplings with Canned Peaches, Covered with Corn

Looking at such cute balls, you won’t immediately think that these are lazy dumplings. Lazy dumplings with canned peaches and corn sprinkles are more like the original dessert. Inside each dumpling-ball there is a fragrant sweet filling – a slice of canned peach, on top – a bright fluffy “fur coat” made of corn sticks. In order to cook such lazy dumplings, it will take very little time, and the dish can even decorate the festive table!

Ingredients

For the dough:

  • Cottage cheese (dry) – 550 g
  • Eggs – 1-2 pcs. (total weight approx. 80 g)
  • Sugar – 95 g
  • Semolina – 100 g
  • Flour – 20 g
  • Vanillin – 1-2 pinches
  • Salt – 1 pinch

For filling:

  • Canned peaches in syrup – 200 g

For crumbling:

  • Corn sticks – 30 g

Directions

  1. We prepare the necessary products. From the specified amount, I got 11 lazy stuffed dumplings.
    Corn sticks with lemon sprinkles are perfect for rolling – lazy dumplings will come out with a pleasant lemon aroma. But you can also use regular corn sticks.
  2. Throw the peaches on a sieve to drain the syrup. If desired, remove the peels from the peels.
  3. In a deep bowl, combine cottage cheese, flour, semolina, vanillin and an egg. Add some sugar (70 g).
  4. Mix thoroughly, rubbing lumps of cottage cheese with a spoon.
  5. Wet hands with water and pinch off a piece of dough. From the dough we make a pancake with a thickness of about 0.8-1 cm. The pancake should be half the size of an adult palm or the size of a child’s palm.
  6. Separate a small piece of peach with a teaspoon.
  7. Put a slice of peach on the curd pancake.
  8. Slightly crush the sharp edges of the peach slice with a spoon so that there are no corners.
  9. With wet hands, form a ball from a curd pancake so that the filling is inside.
  10. We form the rest of the lazy dumplings in the same way. I got 11 pieces.
  11. Pour about 1.2 liters of water into a saucepan, add the remaining sugar (1 tablespoon) and a pinch of salt. We put on maximum heat and bring to a boil.
    Dip 5-6 dumplings into the water with a slotted spoon (the first batch), mix and reduce the heat to a minimum. When the dumplings come up, cook them over low heat for about 2 minutes. After that, take out and let cool slightly. During this time we are preparing the second batch of dumplings. I prepared 2 batches.
  12. Put the corn sticks in a bowl and grind with a crush.
  13. Roll each dumpling ball in corn dust. Let the balls lie down for 5-7 minutes and roll in the topping a second time.
  14. Unusual lazy dumplings with canned peaches, in corn sprinkles are ready.
    Lazy dumplings are especially tasty when freshly cooked, then corn sprinkles are the most crunchy. When cooled down, it is also tasty, but the sprinkles no longer crunch.
