Ingredients
- 150 g lettuce, mixed (e.. rocket, baby spinach, lollo rosso, lollo verde)
- 1 grapefruit (s), pink
- 100 g plain yohurt
- 5 tablespoon white wine vinegar
- 3 tablespoon olive oil
- 2 teaspoons mustard
- 2 teaspoons honey
- 1 teaspoon orange peel, grated
- Herbs, (salad herbs), fresh
- salt and pepper

- Wash salads and spin dry well. Fillet the grapefruit, collecting the juice separately. Cut the grapefruit fillets into bite-sized pieces.
- Mix the yogurt, white wine vinegar, olive oil, mustard, honey, orange peel, salt, pepper and salad herbs until smooth. Season to taste with the collected grapefruit juice.
- Mix the lettuce with the yoghurt dressing well, then carefully fold in the grapefruit pieces.
