“Leaky” Biscuit with Chocolate

When there is no time for a full-fledged cake, you can make such a “leaky” sponge cake. Thanks to the holes, the chocolate cream contacts the biscuit more closely, and the cake, even without impregnation, turns out to be moist and tender.

Ingredients

For the test:

  • Wheat flour – 200 g
  • Eggs – 3 pcs.
  • Sugar – 200 g
  • Baking powder – 1 teaspoon with a slide
  • Hot water – 100 ml

For chocolate cream:

  • Butter – 125 g
  • Sugar – 50 g
  • Cocoa powder – 2 tbsp
  • Fat sour cream – 200 ml

For decoration:

  • Coconut flakes – 1 tbsp

Directions

  1. Prepare all the ingredients before making the Chocolate Cream Biscuit Pie. It is very convenient when everything is at hand and you do not need to be distracted by the search for ingredients during the cooking process.
    Turn on the oven to heat up to 180 degrees.
  2. In a deep bowl, combine the eggs with the sugar.
  3. Use a blender or a regular whisk to mix the eggs and sugar until whitened. Add hot water (about 70 degrees) and mix again with a blender.
  4. Add wheat flour mixed with baking powder and stir.
  5. The dough will turn out to be liquid, approximately like the dough for pancakes.
  6. Line a baking dish with parchment. Pour the biscuit dough into the prepared form.
  7. Bake the sponge cake in an oven preheated to 180 degrees, about 30 minutes, until tender.
  8. In the meantime, prepare your chocolate cream. Combine the sugar, cocoa, sour cream, and butter in a stove-safe saucepan.
  9. Heat over medium heat, stirring occasionally, until sugar dissolves. The cream will become beautiful – shiny and uniform.
  10. Poke a still warm biscuit over the entire surface with a handle from a wooden or silicone spatula.
  11. Fill the cake generously with warm cream so that it also penetrates the holes. Spread the rest of the cream over the surface.
  12. Top with a sponge cake with chocolate cream with coconut flakes or any pastry topping.
  13. Place the sponge cake in the refrigerator for 2-3 hours to stabilize the cream and slightly harden. Then take out the pie and cut it into portions.
  14. Wet, tender, and incredibly tasty chocolate cake – just what you need for the arrival of guests!
