  • Orange – 1 pc.
  • Flour – 1 glass
  • Salt – a pinch
  • Soda – 0.5 teaspoon
  • Apple cider vinegar or lemon juice
  • Sugar – 0.5 cups
  • Vegetable oil – 30-40 ml
  • Nuts / seeds (or raisins, or candied fruits) – optional

Lean Orange Muffins Instructions

  1. Prepare foods for lean muffins.
  2. From an orange, we need zest and juice. The zest can be removed with a grater, and the juice carefully squeezed out by hand.
  3. Beat the grated zest, orange juice, sugar, salt and vegetable oil using a mixer.
  4. The baking soda should be quenched with apple cider vinegar or lemon juice and added to a bowl as well.
  5. Now you can sift the flour and stir it into the sugar-orange mixture. You should have a thick dough (like the thickest store sour cream). If the dough of the desired consistency has not turned out, then add a little more flour.
    Right now you need to add fillers, if any (raisins, seeds and nuts, candied fruits).
  6. We grease the molds with vegetable oil. We put the dough in molds, leave some space on top for lifting the muffins.
  7. We send the lean orange muffins to the oven, preheated to 180 degrees, for about 30 minutes.
  8. Lenten orange muffins are ready! Bon Appetit!
