Ingredients

  • 400 g potato (s), floury
  • 150 g meat loaf, sliced
  • 0.5 ½ bunch spring onion (s)
  • 3 tablespoon clarified butter
  • 1 teaspoon mustard
  • salt
  • pepper
  • possibly chives for garnish

Instructions

  1. Wash and brush the potatoes. Then cook in unsalted water. Then remove the potatoes from the heat, drain, rinse, peel and let cool. Cut the meat loaf into fine strips. Clean the spring onions, wash them carefully and then cut them into very fine rings. Grate the cooled potatoes very finely.
  2. Heat the clarified butter in a large pan. Pour the potatoes, meat loaf and spring onions into the pan and fry them while turning. Then season well with mustard, salt and pepper and use a spatula to make lots of small hash browns.
  3. Now fry the rösti until golden brown, then turn and fry the second side until golden brown. Serve immediately.
  4. A mixed green salad with a vinaigrette tastes good with it. Garnish the plates with fine chives.
