Ingredients

  • 1 kg leek
  • 2 large carrot (s)
  • 1 celeriac
  • 1 medium onion (s)
  • 750 g potatoes, floury boilin
  • 75 g bacon, streaky
  • 1 tablespoon oil
  • 1 liter meat broth
  • 4 meatballs, smoked, sliced
  • some salt and pepper, freshly ground
  • some paprika powder, noble sweet
  • 2 tablespoon parsley, chopped

Instructions

  1. Clean the leek, cut lengthways, wash, drain and cut into strips about 2 cm wide. Clean, peel, wash and slice the carrots. Peel, wash and dice the celery. Peel and dice the onion. Peel, wash and dice the potatoes. Cut the sausages into slices.
  2. Dice the bacon and fry in oil. Sauté carrot slices, celery, potato and onion cubes in it. Add meat stock, bring to a boil and simmer for about 5 minutes. Add leek strips and sausage slices and season the soup with salt and pepper, bring to the boil briefly and simmer for another 5 minutes. Season the stew to taste, add a little paprika powder and sprinkle with the parsley.
  3. Tip: Top with a dollop of sour cream or crème fraîche with herbs.
