Ingredients

  • 2 leg goose (s), fresh
  • 400 ml goose stock
  • 1 packet soup vegetables
  • 1 onion (s)
  • 2 spring onion (s)
  • 1 apple
  • 1 orange (s)
  • 150 ml red wine, drier (e.g. Primitivo)
  • 2 tablespoon sauce thickener, dark
  • cinnamon
  • Paprika powder, hot pink
  • Salt and pepper, black
  • 250 ml water

Instructions

  1. Preheat the oven to 180 ° C fan oven.
  2. Wash the fresh goose legs, pat dry and season with salt and pepper from the mill on both sides. Place the legs in a roasting pan (very little roasting fat) or similar and place in the oven without a lid. Then roast the legs in the oven for 1 hour.
  3. In the meantime, cut the soup vegetables, onion and spring onions into large pieces and place in a bowl. Wash and core the apple, cut eighths and add to the bowl with the skin. Finally peel the orange and add the individual pieces as well.

  5. Reduce the temperature to 160 ° C and leave everything in the oven for another hour without the lid.
  6. Take the roaster out of the oven after a total of 2 hours. Take the goose legs out of the roaster and grill them in the oven for another 15 minutes at 230 ° C on the grill setting while being watched. This makes the skin crispy and the meat of the legs remains soft and juicy.
  7. In the meantime, mash the vegetables and fruit from the roaster well in a coarse sieve, catch the mushy liquid that escapes and place in a saucepan with the remaining sauce from the roaster. Heat and thicken the sauce with a dark sauce thickener as desired. Season again to taste and serve with the legs - and then I wish you good appetite.
