Ingredients

  • 1 head white cabbage, approx. kg
  • 125 ml vegetable stock
  • 125 ml lemon juice
  • 100 g clarified butter
  • 200 g rock candy, white
  • 2 bay leaves
  • 4 clove (s)
  • 1 lemon (s), thinly sliced

Instructions

  1. Remove the outer leaves from the head of cabbage, quarter it, remove the stalk, then cut the quarters into wedges. Rinse briefly and pat dry.
  2. Heat the clarified butter in a casserole and fry the cabbage wedges on both sides. Add the spices to the cabbage, pour in the broth and lemon juice and sprinkle the rock candy on top. Without stirring again, close the pot well and reduce the heat. Now stew the cabbage over a medium heat for about an hour, only then stir again.
  3. Arrange on a platter, garnish with lemon wedges and serve as a side dish, e.g., to Kasseler, enough.
