Ingredients
- 350 g lentils
- 500 g pork ribs
- 2 liters water
- 500 g potato (s)
- 1 bunch soup greens
- salt
- 1 clove / s garlic or garlic salt
- 1 teaspoon thyme
- 1 bunch parsley, chopped
- 3 sausages, Mettenden (or dried soaked plums)
- some vinegar
- possibly plum (s), dried, soaked

- Wash the lentils and soak them in the water for 12-24 hours. (Plate lentils do not need to be soaked).
- Bring the lentils and pork ribs to the boil in the soaking water, simmer everything until almost soft.
- Peel, wash and dice the potatoes. Clean the soup greens and cut into small pieces. When the lentils and ribs are almost soft, add all the ingredients including the mustard (or, if you like, soaked plums), season with salt, thyme and garlic (salt). Let everything cook.
- Finally, remove the meat from the bone and add it to the soup again, cut into small pieces.
- Add a little vinegar to the soup.
- Serve the soup sprinkled with parsley. If you like, you can serve the soup with vinegar and sugar or add soaked plums to the soup with the potatoes.
