Light Rocket – Tomato – Feta Salad with Balsamic Dressing

• 1 handful cherry tomato (s)
• 1 box rocket
• 1 packet feta cheese
• 50 ml balsamic vinegar
• 50 ml olive oil
• 1 teaspoon mustard (medium hot or mild)
• 1 teaspoon honey

Instructions

1. Wash the rocket, shake it dry and cut it bite-sized with the scissors. Wash and halve the tomatoes and place in a bowl with the rocket.
2. Put the balsamic vinegar, oil, mustard and honey in a small bowl and whisk well with the whisk. Mix the dressing with the salad and crumble the feta over the salad.
