Light Salad

Fresh cucumbers with boiled eggs are the perfect combination. A quick and easy cucumber salad with eggs makes the perfect snack and light side dish.
Ingredients
- Fresh cucumber – 3 pcs.
- Chicken eggs – 3 pcs.
- Parsley – 0.25 bunch.
- Dill – 0.25 bunch.
- Vegetable oil – 50 ml
- Lemon juice – 20 ml
- Salt to taste
- Pepper – on the tip of a knife
Directions
- Cut the lemon into quarters and squeeze the juice out of one. This should be enough for a salad dressing.
- Wash eggs, cover with cold water, add half a teaspoon of salt. put on fire, bring to a boil, and cook for 8 minutes, so that it is hard-boiled. Cool in cold water, peel.
- Cut boiled eggs into slices, put on a dish.
- Wash cucumbers, dry with a paper towel, cut into circles. Place the sliced cucumbers on top of the eggs. Add salt. Pepper to taste.
- Sprinkle the salad with finely chopped herbs. Season the cucumber salad with lemon juice and vegetable oil.
- An easy and quick cucumber salad with eggs is ready.
