Ingredients

  • 1 can corn
  • 1 can tangerine (s)
  • 2 apples, e.g., Elstar
  • 1 leek
  • 5 tablespoon lemon juice
  • 3 tablespoon sunflower oil
  • 1 tablespoon, heaped sugar

Instructions

  1. Drain the corn and mandarins.
  2. Mix the lemon juice, oil and sugar together well, preferably in a bowl with a sealable lid.
  3. Peel and slice the apples, but not too finely, they should still have a little bite. Immediately add the apples to the lemon marinade and mix well. Stir in the corn and mandarins. Clean the leek, cut the stick in half and only cut the light part into fine strips. Mix these with the salad. Put the lid on the bowl and let it sit in the fridge for a few hours.
  4. I like to make the salad the day before. The lemon juice does not turn the apples brown.
  5. If you give the salad as a side dish, it is enough for 4 people. If you just want to eat the salad, it`s probably only enough for 2, I haven`t tried that yet.
