Ingredients

  • 1 roll, from the day before
  • 1 medium onion (s)
  • 500 g minced meat, mixed

  • 1 bunch spring onion (s) and possibly garlic to taste (freshly chopped or frozen)
  • 250 g cherry tomato (s) and / or colored peppers as required
  • 500 g mushrooms
  • 2 tablespoons oil
  • 4 tablespoon tomato paste
  • 375 ml vegetable stock, (also instant)
  • 1 tablespoon sauce thickener, lighter
  • g sour cream, firm
  • parsley
  • Paprika powder, noble sweet

Instructions

  1. Soak the rolls in cold water. Peel the onions and dice them very finely. Knead the minced meat, squeezed bun, diced onion and egg. Season with salt and pepper vigorously.
  2. Shape the dough into small balls.
  3. Clean and wash the spring onions, cherry tomatoes and mushrooms. Halve tomatoes and mushrooms. Cut the spring onions diagonally into pieces approx. 2 cm long.
  4. Heat the oil in a pan and fry the balls brown all over while turning. Add the mushrooms and fry them as well. Now possibly also add the garlic. Fold in the spring onions, cherry tomatoes and / or peppers, sear briefly. Stir in tomato paste, deglaze with stock and bring to the boil. When adding fresh paprika, please note the slightly longer braising time! Tie with a sauce thickener, simmer for about 1 minute.
  5. Wash parsley, shake dry and chop. Season to taste with salt, pepper and paprika. Put a dollop of sour cream on top and sprinkle with parsley and paprika.
  6. Is also wonderfully suitable for parties, guests, etc.
  7. White bread, rolls and herb butter go well with this.
